Abstract
This study is the second phase of a project designed to develop a nutrition education course for child care centers. This course will be used by child care site administrators to educate staff about proper nutrition for preschoolers, as well as the Federal and State guidelines for child nutrition programs. This study evaluated whether this course would have an impact on nutrition knowledge and attitudes. The study was quasi-experimental, using the one-group pretest-posttest design. Ten administrators participated, each forming his or her own subgroup, with a total of 92 subjects. Data analysis was done by multiple regression analysis, using the Statistical Package for the Social Sciences (SPSS). Results showed a significant difference between pretest and posttest mean scores, using the T-test for Correlated Squares ( one-tailed test). Multiple regression analysis showed several relationships, the first being there was no significant difference in the attitudes between the participants in the various subgroups. Then when age of the participant and attitude score were factored in as independent variables, there were relations to scores obtained on the knowledge instrument posttest. However, when previous achievement was factored in through scholastic achievement and pretest score, the previous relationships were not found to be significant.
